Polarimetry - Chiral substances

Polarimetry is a measurement and analysis technique that determines the properties of a sample by observing changes in the polarization state of incident light as it passes through. This technique is used in biochemistry to measure the concentration of optically active substances such as sugars, and in the pharmaceutical industry to monitor the purity of compounds and analyze the composition of mixtures.

Optically active substances or active media have the ability to rotate the plane of linearly polarized light as it passes through them. This phenomenon is known as optical rotation. It occurs in chiral molecules (molecules that are not superimposable on their mirror image), such as sugars (glucose, fructose) and certain amino acids.
