Through a rotating helix, we observe the variation in the polarization of a beam passing through a highly concentrated sugar solution. - With monochromatic light, it is possible to determine the specific rotatory power of the solution. - With white light, we highlight the direction of rotation of the polarization by continuously turning the polarizer. - It should be noted that sucrose is dextrorotatory and fructose is levorotatory.
