Starch Digestion Kit
Objective of the Practical Work:
Visualize the action of an enzyme on a food, here a complex carbohydrate: starch.
Principle:
The student observes both the disappearance of starch and the appearance of a new compound: glucose. By comparing the structural formulas of starch and glucose, they will deduce the role of the enzyme and understand that the chemical action is one of the steps in the transformation of food necessary for digestion.
This basic manipulation can be complemented by studying the parameters influencing the enzymatic reaction, for example, temperature, pH, or verifying the selectivity by using other foods.

The kit consists of:
- 1 microtube of starch (approximately 0.5 g)
- 1 microtube of amylase (approximately 0.5 g)
- 125 ml of Lugol in a dropper bottle
- 50 glucose test strips
