May contain traces of amylase, maltase, glycogenase, invertase, and galactose oxidase.
Activity: 100,000 to 150,000 units per gram.
One unit oxidizes 10-6 moles of ß-D glucose to D-gluconic acid and hydrogen peroxide per minute at pH 5.1 and 35°C; activity can double in an oxygen-saturated reaction medium.
Store in the freezer at -20°C.
